Nutritional Delight

This weekend I decided to travel home and spend some time with my mom and dad. One of my favourites ways to up all of the fruits and vegetables that would otherwise be going bad in my fridge over the weekend is to blend it all up into a delicious smoothie!

This blender contains it all… kale, carrots, cucumber, frozen peaches, blueberries, and a couple cherry tomatoes.

I also finally went to the doctors today for that sore throat and got some medication. It still hurts, but hopefully the medication will work it’s magic over the next few days and help perk me up!

Pumpkin Chocolate Chip Muffins

I am going to share with you one of my ABSOLUTE favourite muffin recipes! I found this recipe a few months ago – back in the fall when everyone developed an obsession for recipes involving pumpkin, and I haven’t  been able to get enough of it since!

These Pumpkin Chocolate Chip Muffins are amazing! I always have a batch hanging out in my freezer for those odd times when I’m craving them. They’re quick, easy, and – most importantly – delicious!

Down and Out

Well… Despite my attempts at being more productive and spending my time more wisely, it turns out that being productive is not in the stars for me at this week! I seem to have come down with and EXHAUSTING cold – sore throat, pounding head, congestion – I’ve got all the symptoms.

I was procrastinating on taking anything for it in hopes that it wasn’t too serious and would heal itself, but I have reached the point at which I can no longer take it!

I buckled and took some night time Buckley’s. I find myself super hopeful that when I wake up in the morning, I will be feeling much better. I am usually really hesitant about taking medicine, but I’m not sure what else  I can do at this point!

Core Competencies

Good Afternoon!

As many people know, being healthy encompasses a wide range well-being that includes physical health, mental health, and emotional health. It is very important, yet difficult, to find a good balance between these aspects that allows the optimal amount of health, well-being and happiness. Along with this knowledge, I have also been taught that no matter who you are, what you do or how good you are at something, there is alway room for improvement and that no else is going to change your life for you.

I have decided that I need to improve my own mental and emotional well-being. I am prone to getting overly emotional about little things that are, in the long-run, very unimportant, and I get stressed out about things quickly. The hard part is figuring out where to start personal improvement.

Like when I began my journey on nutritional health, the best place I know to start is with books. They can tell you so much, and help point you in the right direction.  I have read several books, and one that has stood out to me the most thus far is called 68 Hours, by Laura Vanderkam. This books discusses the concept of time – along with the misconception that most people feel they do not have enough time in the day to spend any amount of time doing what they want to do.

Laura talks about successful individuals, and how they spend their time doing tasks that align with their core competencies Core competencies are the things that someone is good at and that they enjoy to do. Successful people also don’t spend their time doing things that they don’t deem to be a priority.

I have a HUGE problem with procrastination. I have decided that it needs to stop – because I can’t continue being stressed and behind on life because of it. I feel like I’m missing out on life because the time I spend procrastinating is spent doing tasks that do not align with my core competencies – such as watching movies, playing games, surfing the internet etc.

Therefore, I decided to start with determining what my core competencies are, and in doing this I learned that I am very much in the process of developing my core competencies. The picture above is what I have currently come up with – and I’m sure they will be constantly changing in future years.

Main goal: to better plan my time so that I spend more of it doing the things that I enjoy – my core competencies, and spend less time doing aimless tasks like playing games and watching t.v.

Starting the Day Off Right

Good Morning!

I find that the way I start my day off can make or break how the rest of it goes. I always try to start my day with something that makes me feel good, energized and wakes me up. One thing that helps me do that is drinking a glass of warm lemon water in the morning. Thus far, I haven’t been able to turn this into a daily habit – mainly because I do a lot of travelling during the weekends and it gets really difficult to get into a solid routine.

I have read tons of articles and blogs that say Lemon water is supposed to help with digestion, clean toxins from the body, and clear your skin. I’m not exactly sure if it actually does all of this, but I do know that it makes me feel good and helps set the tone for the rest of the day!

Black Bean Brownies

So this Friday is my Boyfriend’s birthday and I have been looking for a delicious recipe to bring to him when I go to visit. After a long time of searching I found a recipe for Black Bean Brownies. I’ll admit: I was SUPER skeptical about whether or not these would taste good. I mean… beans?!?! But, after remembering my mom telling me that she used to make brownies using beets, I figured that I would give this one a chance.

Now, before I make these and feed them to my boyfriend for his birthday, I thought I should probably give them a test run. Turns out, THEY ARE DELICIOUS! They are super moist and soft and delicious! I added chocolate chips on the top, and to be honest I don’t think they would taste nearly as good without the chocolate chips, but with them… they are perfect. The chocolate chips help give it a bit more sweetness and gives it even more chocolatey goodness.

I used raw honey in this recipe instead of sugar. Also, if you don’t give them enough time to sufficiently cool down, they break apart really easily.

Next time I would like to try making a Vanilla Whipped Cream Frosting to put on top. I’ll let you know how that one turns out on Thursday! 🙂
