Black Bean Brownies

So this Friday is my Boyfriend’s birthday and I have been looking for a delicious recipe to bring to him when I go to visit. After a long time of searching I found a recipe for Black Bean Brownies. I’ll admit: I was SUPER skeptical about whether or not these would taste good. I mean… beans?!?! But, after remembering my mom telling me that she used to make brownies using beets, I figured that I would give this one a chance.

Now, before I make these and feed them to my boyfriend for his birthday, I thought I should probably give them a test run. Turns out, THEY ARE DELICIOUS! They are super moist and soft and delicious! I added chocolate chips on the top, and to be honest I don’t think they would taste nearly as good without the chocolate chips, but with them… they are perfect. The chocolate chips help give it a bit more sweetness and gives it even more chocolatey goodness.

I used raw honey in this recipe instead of sugar. Also, if you don’t give them enough time to sufficiently cool down, they break apart really easily.

Next time I would like to try making a Vanilla Whipped Cream Frosting to put on top. I’ll let you know how that one turns out on Thursday! 🙂
